I love to hear my wife's stories, she tells them to me as foreplay and then we have amazing sex

If you want your girlfriend to open up more, she needs to know that you really, really like hearing about her past sexual experiences. Just as some guys really love blow jobs, or talking dirty, you get turned on hearing about her past.

Most girls don't like talking about their previous sexual experiences because of the whole "slut" stigma. In her mind, she is yours now, so why harp on the past? If you want to get her over this hurdle, you have to communicate clearly and convincingly that you won't pass judgment on the juicy details of her past, and instead will only like her more, and more, and more.

Additionally, make sure that she knows that this is pretty important to you. Having a satisfying sex life is an important part of a healthy relationship. If one partner cannot indulge the sexual kinks of the other, the odds of a happy, long-lasting relationship are not good.

If she won't indulge you at all (and she may have good reasons to avoid bringing up the past). You'll have to decide if this is a deal breaker, or not, and either adjust, or move on.

Good Luck!
